4 boneless, skinless chicken breasts
1 cup chopped fresh spinach
1/2 cup chopped artichoke hearts (canned or jarred, drained)
4 ounces cream cheese, softened
1/4 cup grated Parmesan cheese
2 cloves garlic, minced
Salt and black pepper to taste
1 tablespoon olive oil
Instructions
Preheat your oven to 375°F (190°C).
In a medium bowl, combine the chopped spinach, artichoke hearts, softened cream cheese, Parmesan cheese, and minced garlic. Season with salt and pepper. Mix until well combined.
Butterfly each chicken breast by slicing horizontally almost all the way through, creating a pocket.
Stuff each chicken breast generously with the spinach artichoke mixture.
Secure the opening of each chicken breast with toothpicks if necessary.
Season the outside of the chicken breasts with salt and pepper.
Heat olive oil in an oven-safe skillet over medium-high heat.
