  • 1 large yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 pound fresh spinach, washed
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream (or full-fat coconut milk for dairy-free)
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper (or to taste)
  • Pinch of nutmeg (optional)

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat.
  2. Add the chopped onion and cook until softened, about 5 to 7 minutes.
  3. Stir in the minced garlic and cook for 1 minute until fragrant.
  4. Add the fresh spinach in batches, stirring until it wilts down completely.
  5. Pour in the broth and bring the mixture to a simmer. Cook for about 10 minutes.
  6. Carefully transfer the soup mixture to a blender (or use an immersion blender directly in the pot). Blend until completely smooth. Return the pureed soup to the pot if necessary.
  7. Stir in the heavy cream (or coconut milk), salt, pepper, and nutmeg, if using.
