  • 1/2 teaspoon smoked paprika

  • 2 large bell peppers (one red, one green), sliced
  • 1 large yellow onion, sliced

Instructions

  1. Prepare the Marinade: In a medium bowl, whisk together the lime juice, olive oil, minced garlic, cumin, chili powder, smoked paprika, oregano, cayenne pepper (if using), salt, and black pepper.
  2. Marinate the Steak: Add the sliced steak to the marinade, toss to coat completely. Cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours, for the best flavor. Do not marinate longer than 4 hours, as the lime juice can start to break down the meat too much.
  3. Cook the Vegetables: Heat 1 tablespoon of butter or oil in a large, heavy skillet (cast iron works great for that ‘sizzling’ effect) over medium-high heat. Add the sliced bell peppers and onions. Cook, stirring occasionally, for 5 to 7 minutes until they are tender-crisp and slightly charred. Remove the vegetables from the skillet and set them aside on a plate.
  4. Cook the Steak: Add the remaining 1 tablespoon of butter or oil to the hot skillet. Remove the steak from the marinade, letting excess drip off (discard the remaining marinade). Add the steak strips to the skillet in a single layer if possible; work in batches if necessary to avoid overcrowding, which causes steaming instead of searing.
  5. Sear the Steak: Cook the steak for 2 to 3 minutes per side until nicely browned and cooked to your desired doneness. For medium-rare, aim for an internal temperature of 130°F.
  6. Combine and Serve: Return the cooked vegetables to the skillet with the steak. Toss everything together quickly to reheat. Serve immediately with warm tortillas and your favorite toppings for a restaurant-style experience.

  • For the best ‘sizzling’ presentation, serve the fajita mixture directly from the hot skillet onto the table, or transfer to a cast iron serving platter.
