1 lb boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
8 oz dried egg noodles or ramen noodles
1 tbsp vegetable oil
4 cloves garlic, minced
1 inch ginger, grated
1/4 cup soy sauce
1/4 cup honey or brown sugar
2 tbsp rice vinegar
1 tbsp sesame oil
1 tsp sriracha (optional)
1/4 cup water or chicken broth
1 tbsp cornstarch
2 green onions, sliced for garnish
1 tsp sesame seeds for garnish
Instructions
Cook the noodles according to package directions. Drain them and set aside.
In a small bowl, whisk together the water or broth and cornstarch to create a slurry. Set aside.
Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove the chicken and set it aside.
Add the minced garlic and grated ginger to the same skillet. Cook for about 30 seconds until fragrant.
Pour in the soy sauce, honey (or brown sugar), rice vinegar, sesame oil, and sriracha (if using). Bring the sauce to a simmer.
Whisk the cornstarch slurry again and pour it into the simmering sauce. Stir constantly until the sauce thickens and becomes sticky, about 1 minute.
Return the cooked chicken to the skillet. Toss to coat the chicken completely in the sticky sauce.
Add the cooked noodles to the skillet. Toss everything together until the noodles are fully coated with the sauce and heated through.
Serve immediately, garnished with sliced green onions and sesame seeds.
Notes
You can substitute chicken thighs for breasts; thighs remain more moist during cooking.
For extra vegetables, add sliced bell peppers or broccoli florets when you cook the chicken.
Adjust the amount of honey or sriracha to control the sweetness and spice level.
