  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can tomato sauce
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 ounces no-boil lasagna noodles
  • 15 ounces ricotta cheese
  • 1 egg, beaten
  • 1/2 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese

Instructions

  1. In a large skillet, brown the ground beef with the onion and garlic over medium-high heat. Drain off any excess grease.
  2. Stir in the crushed tomatoes, tomato sauce, basil, oregano, salt, and pepper. Bring to a simmer, then reduce heat to low, cover, and cook for 10 minutes.
  3. In a small bowl, combine the ricotta cheese, egg, and Parmesan cheese.
  4. Stir the ricotta mixture and 1 cup of the mozzarella cheese into the skillet.
  5. Add the lasagna noodles to the skillet, breaking them in half if necessary to fit. Ensure they are mostly submerged in the sauce.
  6. Cover and cook on low heat for 20-25 minutes, or until the noodles are tender.
  7. Sprinkle the remaining 1 cup of mozzarella cheese over the top. Cover and let stand for 5 minutes to melt the cheese.

Notes

  • For a vegetarian option, substitute the ground beef with crumbled firm tofu or your favorite plant-based ground.
  • Add a layer of spinach or mushrooms with the noodles for extra vegetables.
