A delightful twist on the classic Italian dessert, this Strawberries & Cream Tiramisu features a vibrant berry flavor with creamy layers. It’s a perfect light and refreshing treat for spring or any time you crave a fruity, creamy indulgence.

  • 1 pound fresh strawberries, hulled and sliced
  • 1/4 cup granulated sugar, divided
  • 1 tablespoon lemon juice
  • 1 1/2 cups mascarpone cheese, softened
  • 1/2 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 12-16 ladyfingers
  • 1/2 cup milk
  • 1/4 cup fresh strawberry puree (from blended strawberries)
  • Fresh mint sprigs for garnish (optional)

Instructions

  1. In a bowl, gently toss the sliced strawberries with 2 tablespoons of granulated sugar and lemon juice. Let them macerate for about 15-20 minutes.
  2. In a separate bowl, beat the mascarpone cheese until smooth.
  3. In another bowl, whip the heavy cream with the powdered sugar and vanilla extract until stiff peaks form.
  4. Gently fold the whipped cream into the mascarpone cheese until just combined.
  5. In a shallow dish, combine the milk and strawberry puree.
  6. Quickly dip each ladyfinger into the milk mixture, ensuring they don’t become too soggy.
  7. Arrange a layer of dipped ladyfingers in the bottom of a serving dish or individual glasses.
  8. Spread half of the mascarpone cream mixture over the ladyfingers.
  9. Layer half of the macerated strawberries over the cream.
  10. Repeat the layers: ladyfingers, remaining mascarpone cream, and remaining strawberries.
  11. Chill in the refrigerator for at least 4 hours, or preferably overnight, to allow the flavors to meld and the dessert to set.
  12. Garnish with fresh mint sprigs before serving, if desired.

Notes

  • For a stronger strawberry flavor, you can add a tablespoon of strawberry liqueur to the milk mixture.
  • Ensure your mascarpone cheese is at room temperature for easier mixing.
  • Do not over-dip the ladyfingers, or they will become mushy.
