- 1 cup (2 sticks) unsalted butter, softened
- 1/2 cup granulated sugar
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1 cup granulated sugar
- 2 large eggs
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1/4 cup fresh strawberry puree
- 1/4 teaspoon pink food coloring (optional)
- Powdered sugar, for dusting
- Preheat oven to 350°F (175°C). Grease and flour an 8×8 inch baking pan.
- In a large bowl, cream together the softened butter and 1/2 cup granulated sugar until light and fluffy.
- Beat in the eggs one at a time.
- Stir in the lemon juice, lemon zest, strawberry puree, and pink food coloring (if using) until well combined.
- Gradually add the flour and salt to the wet ingredients, mixing until just combined. Do not overmix.
- Pour the batter evenly into the prepared baking pan.
- Bake for 25-30 minutes, or until the edges are golden brown and the center is set.
- Let the bars cool completely in the pan before cutting.
- Dust with powdered sugar before serving.
