Classic No-Bake Strawberry Mousse

Make a light and airy strawberry mousse without baking. This recipe uses fresh strawberries for a simple, creamy dessert.

  • 1 pound fresh strawberries, hulled and halved
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 packet (about 2 1/4 teaspoons) unflavored gelatin
  • 1/4 cup cold water
  • 1 cup heavy whipping cream
  • 1 teaspoon vanilla extract

Instructions

  1. Combine strawberries, sugar, and lemon juice in a saucepan. Cook over medium heat for 8 minutes, stirring occasionally, until strawberries soften.
  2. Remove from heat and mash the mixture slightly with a fork. Let cool for 15 minutes.
  3. In a small bowl, sprinkle gelatin over cold water. Let it sit for 5 minutes to bloom.
  4. Gently warm the bloomed gelatin in the microwave for about 10 seconds until fully dissolved. Do not boil.
  5. Stir the dissolved gelatin into the slightly cooled strawberry mixture until fully combined. Set aside to cool to room temperature.
  6. In a separate large bowl, whip the heavy cream and vanilla extract until stiff peaks form.
  7. Gently fold one-third of the whipped cream into the strawberry mixture to lighten it.
  8. Fold in the remaining whipped cream until just combined, being careful not to deflate the air.
  9. Spoon the mousse into individual serving dishes or a large bowl.
  10. Chill in the refrigerator for at least 4 hours, or until firm.

Notes

  • For a more intense strawberry flavor, reserve 1/4 cup of the cooked strawberry mixture before blending and fold it in at the end.
  • If you prefer a smoother mousse, blend the cooked strawberry mixture until completely smooth before adding the gelatin.
  • Garnish with fresh mint leaves or sliced strawberries before serving.
