Simple Strawberry Puff Pastry Squares

Make quick, flaky dessert squares featuring fresh strawberries and a light glaze using store-bought puff pastry.

  • 1 sheet frozen puff pastry, thawed
  • 1 cup fresh strawberries, sliced
  • 2 tablespoons granulated sugar
  • 1 teaspoon lemon juice
  • 1 tablespoon cornstarch
  • 1 egg, beaten (for egg wash)
  • 1/4 cup powdered sugar
  • 1 tablespoon milk

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a small bowl, gently toss the sliced strawberries with the granulated sugar, lemon juice, and cornstarch. Set aside.
  3. Unfold the thawed puff pastry sheet onto a lightly floured surface. Cut the sheet into 4 equal squares.
  4. Place the pastry squares onto the prepared baking sheet. Score a border about 1/2 inch from the edge of each square using a knife, being careful not to cut all the way through.
  5. Divide the strawberry mixture evenly among the centers of the 4 pastry squares, staying inside the scored border.
  6. Brush the scored edges of the pastry with the beaten egg wash.
  7. Bake for 15 to 18 minutes, or until the pastry is puffed and golden brown.
  8. While the pastry cools slightly, whisk together the powdered sugar and milk in a small bowl to create a thin glaze.
  9. Drizzle the glaze over the warm pastry squares before serving.

Notes

  • If you prefer a softer filling, you can cook the strawberries with the sugar and cornstarch for 5 minutes before placing them on the pastry.
  • For extra richness, spread a thin layer of cream cheese on the pastry before adding the strawberries.
  • You can use frozen, thawed berries, but drain them well before mixing with the sugar.
