Ingredients

Scale
  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can tomato sauce
  • 4 cups beef broth
  • 1 cup uncooked white rice
  • 1 teaspoon Worcestershire sauce
  • Optional: Shredded cheddar cheese for topping

Instructions

  1. Brown the ground beef in a large pot or Dutch oven over medium heat. Drain excess fat.
  2. Add olive oil, onion, and bell peppers to the pot. Cook until vegetables soften, about 5 minutes.
  3. Stir in garlic, oregano, basil, salt, and pepper. Cook for 1 minute until fragrant.
  4. Pour in crushed tomatoes, tomato sauce, and beef broth. Bring the mixture to a simmer.
  5. Stir in the uncooked rice and Worcestershire sauce.
  6. Reduce heat to low, cover, and simmer for 20 minutes, or until the rice is tender and cooked through.
  7. Taste and adjust seasoning as needed before serving.
  8. Serve hot, topped with shredded cheddar cheese if you like.

Notes

  • Chef Tariq suggests using a mix of different colored bell peppers for visual appeal and varied flavor.
  • If you prefer a thicker soup, add the rice later or use less broth.
  • For a vegetarian option, substitute the ground beef with lentils or mushrooms.
  • Leo often adds a dash of smoked paprika for depth.
