- 2 medium zucchini
- 1 tablespoon olive oil
- 1 pound ground turkey or beef
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1/2 teaspoon dried Italian seasoning
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1/4 cup marinara sauce
- 1/4 cup shredded mozzarella cheese
- 2 tablespoons grated Parmesan cheese
- Preheat your oven to 375°F (190°C).
- Cut the zucchini in half lengthwise. Scoop out the seeds and some of the flesh to create a boat shape.
- Heat olive oil in a skillet over medium heat. Add ground meat and onion, and cook until browned. Drain any excess fat.
- Stir in garlic, Italian seasoning, salt, and pepper. Cook for 1 more minute until fragrant.
- Add marinara sauce to the skillet and stir to combine.
- Place the zucchini boats on a baking sheet.
- Spoon the meat mixture evenly into the zucchini boats.
- Sprinkle mozzarella cheese and Parmesan cheese over the top of each stuffed zucchini.
- Bake for 20-25 minutes, or until the zucchini is tender and the cheese is melted and golden brown.
- Serve hot.
