1 cup cornbread, crumbled
1 cup white bread, cubed and dried
1/2 cup unsalted butter
1/2 cup yellow onion, finely chopped
1/4 cup celery, finely chopped
2 cloves garlic, minced
1 teaspoon fresh sage, chopped
1/2 teaspoon fresh thyme, chopped
1/2 teaspoon salt
1/4 teaspoon black pepper
1 1/2 cups chicken broth
1 large egg, beaten
Instructions
Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin.
In a large bowl, combine the crumbled cornbread and cubed dried white bread.
In a skillet, melt the butter over medium heat. Add the chopped onion and celery and cook until softened, about 5-7 minutes.
Add the minced garlic, chopped sage, and thyme to the skillet. Cook for another minute until fragrant.
Pour the butter, onion, celery, garlic, and herb mixture over the bread and cornbread crumbs.
Season with salt and pepper. Toss gently to combine.
In a separate bowl, whisk together the chicken broth and beaten egg.
Pour the wet ingredients over the bread mixture. Stir until everything is evenly moistened.
Spoon the stuffing mixture into the prepared muffin cups, filling each about two-thirds full.
Bake for 20-25 minutes, or until the tops are golden brown and the edges are slightly crisp.
Let the stuffing muffins cool in the tin for a few minutes before carefully removing them.
Notes
For extra crispiness, you can toast the bread cubes and cornbread before starting.
Feel free to add other herbs like rosemary or parsley.
If you don’t have fresh herbs, use 1/2 teaspoon dried sage and 1/4 teaspoon dried thyme.
