  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract (optional)
  • 3 large eggs
  • 1/2 cup sour cream
  • 1/4 cup all-purpose flour
  • 1/2 cup sugar cookie dough, cut into small pieces (optional inclusion)
  • Festive sprinkles for topping

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan.
  2. Prepare the crust: Press the sugar cookie dough (either store-bought or homemade) evenly into the bottom of the prepared springform pan. If using store-bought dough, you can also press strips up the sides.
  3. Bake the crust for 10-12 minutes until lightly golden. Remove from the oven and let it cool slightly while you prepare the filling. Reduce oven temperature to 325°F (160°C).
  4. In a large bowl, beat the softened cream cheese with an electric mixer until smooth.
  5. Add the granulated sugar, vanilla extract, and almond extract. Mix until just combined.
  6. Beat in the eggs one at a time, mixing just until incorporated after each addition. Do not overmix.
  7. Stir in the sour cream and flour until the batter is smooth.
  8. Pour the cheesecake batter over the slightly cooled sugar cookie crust.
  9. If you are adding sugar cookie dough pieces, gently press them into the top of the batter.
  10. Bake for 45-55 minutes, or until the edges are set but the center still has a slight jiggle.
  11. Turn off the oven, prop the door open slightly, and allow the cheesecake to cool inside the oven for one hour. This prevents cracking.
  12. Remove from the oven and cool completely on a wire rack.
  13. Chill the cheesecake in the refrigerator for at least 4 hours, preferably overnight.
  14. Before serving, decorate the top generously with festive sprinkles.
