  • 1 large head of cauliflower, cut into bite-sized florets
  • 1/2 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cold water (or non-dairy milk for extra richness)
  • 1 cup sweet chili sauce
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger
  • Vegetable oil for frying
  • Sesame seeds and chopped green onions for garnish

Instructions

  1. Prepare the batter by whisking together the flour, cornstarch, salt, and pepper in a large bowl. Slowly whisk in the cold water until you have a smooth, thin batter.
  2. Heat about 2 inches of vegetable oil in a deep pot or Dutch oven to 350°F (175°C).
  3. Dip each cauliflower floret into the batter, ensuring it is fully coated. Let excess batter drip off.
  4. Carefully place the battered florets into the hot oil, working in batches to avoid overcrowding the pot. Fry for 4-6 minutes, turning occasionally, until they are golden brown and crispy.
  5. Remove the fried cauliflower with a slotted spoon and place them on a wire rack lined with paper towels to drain excess oil.
  6. While the cauliflower drains, prepare the sauce by combining the sweet chili sauce, soy sauce, rice vinegar, and grated ginger in a small saucepan. Heat over medium heat until warm and slightly thickened. Do not boil.
  7. Place the crispy cauliflower bites in a large bowl. Pour the warm sauce over the cauliflower and gently toss until every piece is evenly coated.
  8. Serve immediately garnished with sesame seeds and chopped green onions.

Notes

  • For an extra crispy coating, you can double-coat the cauliflower. Dip, fry halfway, remove, let cool slightly, then dip again and finish frying.
  • Adjust the amount of sweet chili sauce based on your preferred spice level.
  • If you prefer baking or air-frying instead of deep-frying, bake at 400°F (200°C) for 20-25 minutes, flipping halfway, until golden, then toss with the warm sauce.
