Make flavorful shrimp skewers coated in a sweet chili glaze while grilling, served with a creamy, spicy Bang Bang dipping sauce.

  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 wooden or metal skewers
  • 1/2 cup sweet chili sauce (for glaze)
  • 2 tablespoons soy sauce (for glaze)
  • 1 tablespoon lime juice (for glaze)
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce (for dipping sauce)
  • 2 tablespoons sriracha (adjust to taste)
  • 1 teaspoon rice vinegar
  • 1 teaspoon honey

Instructions

  1. If using wooden skewers, soak them in water for 30 minutes.
  2. In a bowl, toss the shrimp with olive oil, salt, and pepper. Thread the shrimp onto the prepared skewers, about 4-5 shrimp per skewer.
  3. Prepare the glaze: Whisk together 1/2 cup sweet chili sauce, soy sauce, and lime juice in a small bowl. Set aside.
  4. Prepare the Bang Bang dipping sauce: In a separate bowl, combine mayonnaise, 1/4 cup sweet chili sauce, sriracha, rice vinegar, and honey. Mix until smooth. Refrigerate until serving.
  5. Preheat your grill to medium-high heat. Lightly oil the grates.
  6. Place the shrimp skewers on the hot grill. Grill for 2-3 minutes per side.
  7. During the last minute of cooking on each side, brush the shrimp generously with the sweet chili glaze mixture. Continue grilling until the shrimp are pink and cooked through, about 6-8 minutes total.
  8. Remove the skewers from the grill. Serve immediately with the chilled Bang Bang dipping sauce.

Notes

  • You can substitute the grilling step with broiling or using an air fryer set to 400 degrees Fahrenheit for 8-10 minutes, flipping halfway.
  • For extra flavor, add a pinch of garlic powder to the shrimp marinade before skewering.
  • Chop fresh cilantro or green onions to sprinkle over the finished skewers for garnish.
