  • 1 cup mashed sweet potato (about 1 medium sweet potato)
  • 1/2 cup melted coconut oil or butter
  • 1/2 cup maple syrup or honey
  • 1/2 cup unsweetened cocoa powder
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup gluten-free oat flour or all-purpose flour
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
  2. Cook the sweet potato until very soft. Mash it thoroughly until completely smooth. You need 1 cup of smooth mash.
  3. In a large bowl, whisk together the mashed sweet potato, melted coconut oil, and maple syrup until combined.
  4. Add the eggs and vanilla extract. Whisk until the mixture is smooth and creamy.
  5. In a separate small bowl, whisk together the cocoa powder, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  7. If using, gently fold in the chocolate chips.
  8. Pour the batter into the prepared pan and spread evenly.
  9. Bake for 25 to 30 minutes. A toothpick inserted near the center should come out with moist crumbs attached, not wet batter, for a fudgy texture.
  10. Let the brownies cool completely in the pan on a wire rack before slicing. Cooling helps them set into the fudgiest texture.

  • For a vegan option, substitute the eggs with flax eggs (2 tablespoons ground flaxseed mixed with 6 tablespoons water, let sit for 5 minutes to gel).
  • If you want a flourless brownie idea, you can substitute the flour with an equal amount of almond flour.
