  • 1/2 cup warm milk
  • 2 1/4 teaspoons active dry yeast
  • 1/4 cup granulated sugar plus 1 tablespoon for yeast
  • 1/2 cup unsalted butter, softened, plus 1/2 cup melted for filling
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3 1/2 cups all-purpose flour, plus more for dusting
  • 1 teaspoon salt
  • 1 cup packed light brown sugar for filling
  • 2 tablespoons ground cinnamon
  • 1/4 cup cream cheese, softened for icing
  • 1/4 cup powdered sugar for icing
  • 1 tablespoon milk for icing

Instructions

  1. Mix warm sweet potato puree, 1 tablespoon sugar, and yeast in a large bowl. Let stand until foamy, about 5 minutes.
  2. Stir in the remaining granulated sugar, softened butter, egg, and vanilla extract into the yeast mixture.
  3. Whisk together flour and salt in a separate bowl. Gradually add the flour mixture to the wet ingredients, mixing until a soft dough forms.
  4. Knead the dough on a lightly floured surface for about 5-7 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm place for 1 to 1.5 hours, or until doubled.
  5. In a small bowl, mix the brown sugar, melted butter, and cinnamon for the filling.
  6. Punch down the risen dough. Roll it out on a floured surface into a large rectangle, about 12×18 inches.
  7. Spread the filling mixture evenly over the dough.
  8. Roll the dough tightly into a log, starting from the long side. Cut the log into 12 equal rolls.
  9. Place the rolls in a greased 9×13 inch baking dish. Cover and let rise again for 30 minutes.
  10. Preheat your oven to 375 degrees F (190 degrees C).
  11. Bake for 20-25 minutes, or until golden brown.
  12. While rolls cool slightly, whisk together cream cheese, powdered sugar, and 1 tablespoon milk for the icing.
  13. Drizzle icing over the warm rolls before serving.
