1 pound sweet potatoes, peeled and cubed
1 (5 ounce) can tuna, drained
1 cup cooked pasta
1/2 cup milk
1/4 cup chopped onion
1/4 cup chopped celery
1/4 cup shredded cheddar cheese
2 tablespoons butter
2 tablespoons all-purpose flour
Salt and pepper to taste
Instructions
Preheat your oven to 375°F (190°C).
Boil the sweet potato cubes until tender, then mash them.
In a saucepan, melt the butter over medium heat.
Stir in the flour and cook for 1 minute.
Gradually whisk in the milk until smooth.
Add the chopped onion and celery, and cook until softened.
Stir in the drained tuna and cooked pasta into the sauce.
Gently fold in the mashed sweet potatoes.
Pour the mixture into a baking dish.
Top with shredded cheddar cheese.
Bake for 20-25 minutes, or until bubbly and golden brown.
Notes
For an extra crunch, top with breadcrumbs before baking.
Feel free to add other vegetables like peas or corn.
