Make rich, fudgy brownies using dates as the main sweetener for a naturally sweet, whole-food treat.

  • 1 cup pitted Medjool dates
  • 1/2 cup hot water
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup coconut oil, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup gluten-free oat flour
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line an 8×8 inch baking pan with parchment paper.
  2. Soak the pitted dates in the hot water for 10 minutes to soften them.
  3. Transfer the soaked dates and the soaking water to a food processor or high-speed blender. Process until you create a smooth date paste.
  4. Add the cocoa powder, melted coconut oil, eggs, and vanilla extract to the date paste. Blend until just combined and smooth.
  5. In a separate bowl, whisk together the oat flour, baking soda, and salt.
  6. Add the dry ingredients to the wet ingredients. Mix gently until just incorporated. Do not overmix.
  7. Fold in the chopped walnuts, if using.
  8. Pour the batter into the prepared pan and spread evenly.
  9. Bake for 22 to 25 minutes. The edges should look set, and a toothpick inserted near the center should come out with moist crumbs attached, not wet batter.
  10. Let the brownies cool completely in the pan before slicing. Cooling helps them set into a fudgy texture.

Notes

  • For a smoother date paste, ensure your dates are very soft before blending.
  • If you prefer a less intense chocolate flavor, reduce the cocoa powder to 1/3 cup.
  • You can substitute almond flour for oat flour for a grain-free version.
