1 pound ground chicken or turkey
1/4 cup panko bread crumbs
1 large egg
2 cloves garlic, minced
1 tablespoon fresh ginger, grated
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons olive oil
1 onion, chopped
2 cloves garlic, minced
1 tablespoon fresh ginger, grated
1 tablespoon red curry paste
1 teaspoon curry powder
1 teaspoon turmeric
1/4 teaspoon cayenne pepper (optional)
1 (13.5 ounce) can full-fat coconut milk
1 tablespoon soy sauce or tamari
1 tablespoon lime juice
1/4 cup fresh cilantro, chopped
Instructions
In a bowl, combine ground chicken, panko, egg, minced garlic, grated ginger, salt, and pepper. Mix gently until just combined.
Roll the mixture into small meatballs, about 1 inch in diameter.
Heat olive oil in a large skillet or Dutch oven over medium-high heat.
Add the meatballs to the skillet in a single layer (cook in batches if necessary) and brown them on all sides. Remove meatballs from the skillet and set aside.
Add the chopped onion, minced garlic, and grated ginger to the same skillet. Cook until softened, about 5 minutes.
Stir in the red curry paste, curry powder, turmeric, and cayenne pepper (if using). Cook for 1 minute more until fragrant.
Pour in the coconut milk and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
Return the browned meatballs to the skillet. Reduce heat to low, cover, and simmer for 15-20 minutes, or until the meatballs are cooked through and the sauce has thickened slightly.
Stir in the soy sauce and lime juice.
Garnish with fresh cilantro before serving.
Notes
For extra flavor, you can add a tablespoon of fish sauce to the sauce.
Serve over steamed jasmine rice for a complete meal.
Feel free to add your favorite vegetables like bell peppers or snap peas to the sauce during the last 10 minutes of simmering.
