  • 2 cups Basmati rice, soaked
  • 1.5 lbs chicken or mixed vegetables
  • 1 cup yogurt
  • 1 large onion, thinly sliced
  • 2 tomatoes, chopped
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped mint
  • 3-4 green chilies, slit
  • 1 tbsp ginger-garlic paste
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp garam masala
  • 1/2 tsp cumin powder
  • 1/2 tsp coriander powder
  • Pinch of saffron strands, soaked in milk
  • 4 tbsp ghee or oil
  • Salt to taste
  • Whole spices: 2-3 bay leaves, 4-5 cloves, 4-5 green cardamom, 2-3 black cardamom, 1-inch cinnamon stick
  • Optional: fried onions for garnish

Instructions

  1. Marinate chicken/vegetables with yogurt, ginger-garlic paste, turmeric, red chili powder, garam masala, cumin, coriander, and salt. Let it sit for at least 30 minutes.
  2. In a heavy-bottomed pot, heat ghee or oil. Add whole spices and sauté until fragrant.
  3. Add sliced onions and fry until golden brown.
  4. Add marinated chicken/vegetables and cook until browned and tender.
  5. Layer the cooked meat/vegetables evenly at the bottom of the pot.
  6. Drain the soaked rice and spread it evenly over the meat/vegetables.
  7. Sprinkle chopped cilantro, mint, green chilies, and saffron milk over the rice.
  8. Cover the pot tightly with a lid. You can seal the edges with dough for a better ‘dum’ effect.
  9. Cook on low heat for 20-25 minutes, or until the rice is fully cooked and fluffy.
  10. Let it rest for 10 minutes before gently mixing the layers.
  11. Serve hot, garnished with fried onions if desired.

Notes

  • For a vegetarian version, use mixed vegetables like potatoes, carrots, beans, and cauliflower.
  • Adjust green chilies according to your spice preference.
  • Ensure the pot is well-sealed to trap the steam for perfect ‘dum’ cooking.
  • Soaking the rice helps it cook evenly and remain fluffy.
