Crispy on the outside, fluffy on the inside waffles that are better than any boxed mix. These homemade waffles are perfect for a special brunch.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 large eggs, separated
  • 1 3/4 cups milk
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your waffle iron according to manufacturer instructions.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In a separate medium bowl, whisk together the egg yolks, milk, melted butter, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  5. In a clean bowl, beat the egg whites until stiff peaks form.
  6. Gently fold the beaten egg whites into the waffle batter.
  7. Pour about 1/2 cup of batter onto the preheated waffle iron and cook until golden brown and crispy, about 3-5 minutes.
  8. Repeat with the remaining batter.
  9. Serve immediately with your favorite toppings.

Notes

  • For extra crispy waffles, ensure your waffle iron is fully preheated.
  • Do not overmix the batter; a few lumps are okay.
  • Freshly squeezed lemon juice can be added to the egg whites before beating for extra stability.
  • These waffles freeze well; toast them in a toaster or oven to reheat.
