4 (6 ounce) tilapia fillets
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
2 cloves garlic, minced
1 cup roasted red peppers, drained (from a jar or freshly roasted)
1/2 cup chicken broth
1/4 cup heavy cream
1/2 teaspoon red pepper flakes (adjust to taste)
1 tablespoon fresh lemon juice
1 tablespoon chopped fresh parsley
Instructions
Pat the tilapia fillets dry with paper towels. Season both sides with salt and black pepper.
Heat the olive oil in a large skillet over medium-high heat. Place the tilapia fillets in the hot skillet.
Sear the fish for 3 to 4 minutes per side until golden brown and cooked through. Remove the fish from the skillet and set aside on a plate.
Reduce the heat to medium. Add the minced garlic to the same skillet and cook for 30 seconds until fragrant. Do not let it burn.
Add the roasted red peppers, chicken broth, heavy cream, and red pepper flakes to the skillet. Bring the sauce to a gentle simmer.
Cook the sauce, stirring occasionally, for 3 to 5 minutes until it thickens slightly.
Stir in the lemon juice. Taste the sauce and add more salt, pepper, or red pepper flakes if needed.
Return the cooked tilapia fillets to the skillet. Spoon the sauce over the fish.
Simmer for 1 minute to heat the fish through. Garnish with fresh parsley before serving.
Notes
If you roast your own red peppers, char them over an open flame or under a broiler until the skin is black, then steam them in a covered bowl for 10 minutes before peeling.
For a thicker sauce, mix 1 teaspoon of cornstarch with 1 tablespoon of cold water and stir this slurry into the simmering sauce.
Serve this dish over rice or with steamed green beans.
