1.5 pounds ground lamb or beef
1 large onion, chopped
2 carrots, chopped
2 celery stalks, chopped
2 cloves garlic, minced
1 tablespoon tomato paste
1 cup beef broth
1 teaspoon Worcestershire sauce
1 teaspoon dried thyme
Salt and pepper to taste
2 pounds potatoes, peeled and quartered
1/2 cup milk
1/4 cup butter
1/4 cup grated cheddar cheese (optional)
Instructions
Preheat your oven to 375°F (190°C).
Boil the potatoes until tender. Drain and mash with milk and butter until smooth. Season with salt and pepper.
Brown the ground meat in a large oven-safe skillet over medium-high heat. Drain any excess fat.
Add the onion, carrots, and celery to the skillet. Cook until softened, about 5-7 minutes.
Stir in the minced garlic and cook for 1 minute more until fragrant.
Add the tomato paste and cook for 1 minute, stirring constantly.
Pour in the beef broth and Worcestershire sauce. Stir in the thyme, salt, and pepper. Bring to a simmer and cook for 5-10 minutes, allowing the sauce to thicken.
Spread the mashed potatoes evenly over the meat mixture. If desired, sprinkle with cheddar cheese.
Bake for 25-30 minutes, or until the topping is golden brown and the filling is bubbly.
Let it rest for a few minutes before serving.
Notes
You can use a mix of lamb and beef for a richer flavor.
For a vegetarian version, substitute the meat with lentils and vegetables.
Add peas or corn to the meat mixture for extra flavor and texture.
If you don’t have an oven-safe skillet, transfer the meat mixture to a baking dish before adding the mashed potatoes.
