A popular, moist, and rich vegan chocolate cake recipe that uses grated zucchini for texture and moisture.

Ingredients

  • 1 3/4 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 3/4 cups granulated sugar
  • 1 cup unsweetened plant milk (soy or almond)
  • 1/2 cup vegetable oil
  • 1 tablespoon apple cider vinegar
  • 2 teaspoons vanilla extract
  • 1 cup finely grated zucchini (about 1 medium zucchini)
  • 1/2 cup hot water or brewed coffee

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour one 9-inch round cake pan or line it with parchment paper.
  2. In a large bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt.
  3. In a separate medium bowl, whisk together the sugar, plant milk, vegetable oil, apple cider vinegar, and vanilla extract until combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  5. Gently fold in the grated zucchini.
  6. Carefully pour the hot water or coffee into the batter and stir until smooth. The batter will be thin.
  7. Pour the batter into the prepared cake pan.
  8. Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the cake cool in the pan for 15 minutes before inverting it onto a wire rack to cool completely before frosting.

Notes

  • For the best results, grate the zucchini using the small holes of a box grater and do not squeeze out the excess moisture.
  • Use hot brewed coffee instead of water to deepen the chocolate flavor.
  • Pair this cake with a rich vegan chocolate buttercream frosting for a decadent dessert.
  • This cake freezes well once completely cooled. Wrap tightly in plastic wrap and foil.
