A rustic and impressive mixed berry tart, perfect for summer. This galette offers a simpler way to enjoy berries in a flaky crust, delivering a delightful dessert without much fuss.

  • 3 cups mixed fresh berries (such as blueberries, raspberries, blackberries)
  • 1/4 cup granulated sugar, plus more for sprinkling
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon vanilla extract
  • 1 recipe for galette dough (store-bought or homemade)
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, gently toss the mixed berries with 1/4 cup granulated sugar, cornstarch, lemon juice, and lemon zest. Stir in the vanilla extract.
  3. On a lightly floured surface, roll out your galette dough into a roughly 12-inch circle.
  4. Carefully transfer the dough to the prepared baking sheet.
  5. Spoon the berry mixture into the center of the dough, leaving a 2-inch border.
  6. Gently fold the dough border up and over the edges of the berry filling, pleating as you go.
  7. Brush the folded dough with the beaten egg wash and sprinkle with a little extra granulated sugar.
  8. Bake for 30-40 minutes, or until the crust is golden brown and the berry filling is bubbly.
  9. Let the galette cool on the baking sheet for at least 15-20 minutes before slicing and serving.

Notes

  • You can use any combination of berries you like.
  • If your berries are very sweet, you may want to reduce the sugar slightly.
