1 cup Greek yogurt (plain or vanilla)
1 large pink dragonfruit (pitaya), half pureed, half diced
1/2 cup granola (your favorite kind)
1/4 cup sliced mango
2 tablespoons shredded coconut (unsweetened)
1 tablespoon honey or maple syrup (optional)
Instructions
Prepare your dragonfruit. Scoop out the flesh of one fruit. Blend half of the flesh until smooth to create a vibrant puree. Dice the remaining half into small cubes.
If using, gently stir the honey or maple syrup into the Greek yogurt.
Begin layering in two glasses. Place a spoonful of granola at the bottom of each glass.
Add a layer of the white or light-colored yogurt mixture over the granola.
Spoon half of the bright pink dragonfruit puree over the yogurt layer in each glass.
Add a layer of diced dragonfruit pieces and sliced mango over the puree.
Repeat the layers: yogurt, then the remaining dragonfruit puree, and finally the remaining diced dragonfruit.
Top each parfait generously with the remaining granola and a sprinkle of shredded coconut.
Serve immediately and enjoy your beautiful breakfast for two.
Notes
For an extra boost of protein, use Icelandic Skyr instead of Greek yogurt.
If you cannot find fresh dragonfruit, frozen chunks work well when slightly thawed.
Prepare the layers the night before, but keep the granola separate and add it just before serving to keep it crunchy.
You can substitute any tropical fruit you enjoy, like pineapple or passion fruit, for the mango.
