Ingredients
Scale
1 pound dry pasta (like rotini or elbow macaroni)
2 cans (5 oz each) tuna in water, drained
1 cup plain Greek yogurt
1/2 cup mayonnaise (or substitute with all plain Greek yogurt for an even lighter version)
1/4 cup finely chopped celery
1/4 cup finely chopped red onion
1/4 cup sweet pickle relish
2 tablespoons fresh lemon juice
1 tablespoon Dijon mustard
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup chopped fresh parsley
Instructions
Cook the pasta according to package directions until al dente. Drain the pasta, rinse briefly with cold water to stop cooking, and set aside in a large bowl.
In a separate medium bowl, whisk together the Greek yogurt, mayonnaise, lemon juice, Dijon mustard, salt, and pepper until smooth and creamy. This is your healthy dressing base.
Add the drained tuna, chopped celery, red onion, and sweet pickle relish to the large bowl with the cooled pasta.
Pour the creamy dressing over the pasta and tuna mixture.
Gently fold all ingredients together until everything is evenly coated.
Stir in the fresh chopped parsley.
Taste and adjust seasoning, adding more salt, pepper, or lemon juice as needed for your preference.
Cover the bowl and refrigerate for at least 2 hours before serving to allow the flavors to meld. This makes it great for meal prep.
Notes
For a smoky twist, try adding 1/2 teaspoon of smoked paprika to the dressing mixture.
If you prefer a tangier salad, substitute the sweet pickle relish with dill pickle relish.
This salad holds well in the refrigerator for up to four days, making it an ideal make-ahead lunch.
Chef Tariq suggests adding a pinch of celery seed to the dressing for a deeper savory note.
