2 (6-ounce) tuna steaks, about 1 inch thick
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
4 tablespoons unsalted butter
2 cloves garlic, minced
1 tablespoon fresh parsley, chopped
1 teaspoon fresh thyme leaves
1 teaspoon lemon juice
Instructions
Pat the tuna steaks completely dry with paper towels. Season both sides evenly with salt and pepper.
Heat the olive oil in a heavy, oven-safe skillet (cast iron works best) over high heat until the oil shimmers.
Carefully place the tuna steaks in the hot skillet. Sear for 1.5 to 2 minutes without moving them to develop a dark crust.
Flip the steaks. Immediately add the butter to the skillet. As the butter melts, tilt the pan and spoon the melted butter over the tops of the steaks continuously for another 1.5 to 2 minutes for rare to medium-rare.
Remove the skillet from the heat. Stir the minced garlic, parsley, and thyme into the remaining butter in the pan.
Squeeze the lemon juice into the butter sauce. Spoon the garlic herb butter over the steaks immediately before serving.
Notes
For the best sear, ensure your pan is very hot before adding the fish.
Adjust cooking time by 30 seconds per side if you prefer medium doneness.
Use high-quality, sushi-grade tuna for the best texture when served rare.
