4 large bell peppers
1 can (5 oz) tuna, drained
1/4 cup mayonnaise
2 tablespoons chopped celery
1 tablespoon chopped onion
1 tablespoon sweet pickle relish
1 teaspoon Dijon mustard
Salt and pepper to taste
1/4 cup shredded cheddar cheese (optional)
Instructions
Preheat your oven to 375°F (190°C).
Cut the tops off the bell peppers and remove the seeds and membranes.
In a bowl, mix the drained tuna, mayonnaise, chopped celery, chopped onion, sweet pickle relish, Dijon mustard, salt, and pepper.
Spoon the tuna mixture evenly into the bell peppers.
Place the stuffed peppers in a baking dish. You can add a little water to the bottom of the dish to help keep the peppers moist.
Bake for 25-30 minutes, or until the peppers are tender and the tuna filling is heated through.
If desired, sprinkle with shredded cheddar cheese during the last 5 minutes of baking.
Notes
For a creamier filling, add a tablespoon of sour cream or Greek yogurt.
Feel free to add other seasonings like paprika, garlic powder, or a pinch of cayenne pepper for a little heat.
You can serve these as a main course or as a side dish.
