1 pound thinly sliced beef (such as ribeye or sirloin)
1 (10 ounce) package dried udon noodles
6 cups beef broth
1/4 cup soy sauce
2 tablespoons mirin
1 tablespoon grated fresh ginger
2 cloves garlic, minced
1 cup sliced shiitake mushrooms
1/2 cup sliced carrots
1 cup chopped Napa cabbage
1/2 cup sliced green onions, for garnish
1 teaspoon sesame oil
Instructions
Combine the beef broth, soy sauce, mirin, ginger, and garlic in a large pot. Bring the mixture to a simmer over medium heat.
Add the shiitake mushrooms and carrots to the simmering broth. Cook for 5 minutes until slightly tender.
Add the udon noodles and Napa cabbage to the pot. Cook according to package directions for the noodles, usually about 3 to 5 minutes.
Add the thinly sliced beef to the hot pot. Cook just until the beef changes color, about 1 to 2 minutes. Avoid overcooking the beef.
Stir in the sesame oil just before serving.
Ladle the hot pot into bowls, making sure each serving gets noodles, beef, and vegetables.
Garnish generously with sliced green onions.
Notes
You can substitute chicken or tofu for the beef.
For extra richness, add a splash of sake to the broth base.
Serve with a small dish of chili oil for those who like heat.
