1/4 cup granulated sugar
1/4 cup packed light brown sugar
1/4 teaspoon ground cinnamon
4 tablespoons cold unsalted butter, cut into small pieces
Instructions
Preheat your oven to 375 degrees F. Line baking sheets with parchment paper.
Make the streusel: In a small bowl, combine the streusel flour, sugars, and cinnamon. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Set aside.
In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the eggs one at a time, then mix in the vanilla extract.
In a separate medium bowl, whisk together the flour, baking powder, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
