For the Cinnamon Swirl: 1/2 cup packed light brown sugar, 1 tablespoon ground cinnamon, 2 tablespoons unsalted butter, melted
For the Double Streusel Topping: 1 cup all-purpose flour, 1/2 cup granulated sugar, 1/2 cup packed light brown sugar, 1 teaspoon ground cinnamon, 1/2 cup (1 stick) cold unsalted butter, cut into small pieces
For the Simple Glaze (Optional): 1 cup powdered sugar, 2-3 tablespoons milk or cream, 1/2 teaspoon vanilla extract
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 9-inch square baking pan or a 10-inch tube pan.
In a medium bowl, whisk together the 1 3/4 cups flour, baking powder, baking soda, and salt. Set aside.
In a large bowl, cream together the 1/2 cup softened butter and 1 cup granulated sugar until light and fluffy. Beat in the eggs one at a time, then mix in the vanilla extract.
Mix in the sour cream until just combined. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just incorporated. Do not overmix.
Prepare the Cinnamon Swirl: In a small bowl, mix the brown sugar, 1 tablespoon cinnamon, and 2 tablespoons melted butter.
Prepare the Streusel Topping: In a separate bowl, combine the 1 cup flour, 1/2 cup granulated sugar, 1/2 cup brown sugar, and 1 teaspoon cinnamon. Cut in the 1/2 cup cold butter using a pastry blender or your fingers until coarse crumbs form.
Assemble the Cake: Pour half of the batter into the prepared pan. Sprinkle half of the cinnamon swirl mixture evenly over the batter. Sprinkle half of the streusel topping over that. Gently spread the remaining batter over the streusel layer. Dot the top with the remaining cinnamon swirl mixture. Sprinkle the remaining streusel topping over the entire surface.
Bake for 45 to 55 minutes, or until a toothpick inserted into the center comes out clean.
Let the cake cool in the pan for 15 minutes before inverting onto a wire rack to cool completely.
Prepare the Glaze (If using): Whisk together the powdered sugar, milk, and vanilla until smooth. Drizzle over the cooled cake.
