  • 1/4 cup unsweetened non-dairy milk (like almond or soy)
  • 1 teaspoon vanilla extract
  • 1 tablespoon flaxseed meal mixed with 3 tablespoons water (flax egg)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 12-cup muffin tin or line it with paper liners.
  2. In a medium bowl, whisk together the flour, baking soda, cinnamon, and salt.
  3. In a separate large bowl, mash the ripe bananas until smooth.
  4. Add the granulated sugar, vegetable oil, non-dairy milk, vanilla extract, and flax egg to the mashed bananas. Stir until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  6. Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.
