Enjoy these delicious vegan chocolate chip muffins, made with simple plant-based ingredients. They are perfect for a quick breakfast or a sweet treat.

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsweetened non-dairy milk (such as almond, soy, or oat)
  • 1/3 cup vegetable oil
  • 1 tablespoon flaxseed meal mixed with 3 tablespoons water (flax egg)
  • 1 teaspoon vanilla extract
  • 1/2 cup vegan chocolate chips

Instructions

  1. Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it well.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt.
  3. In a separate bowl, whisk together the non-dairy milk, vegetable oil, flax egg, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  5. Gently fold in the vegan chocolate chips.
  6. Divide the batter evenly among the muffin cups, filling each about two-thirds full.
  7. Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For extra moist muffins, you can add 1/4 cup of unsweetened applesauce.
  • To make them gluten-free, use a gluten-free all-purpose flour blend.
  • Store leftover muffins in an airtight container at room temperature for up to 3 days.
