A comforting and protein-rich vegan lentil curry, inspired by dal traditions, featuring creamy spices for a satisfying meal.

Ingredients

  • 1 cup red lentils, rinsed
  • 4 cups vegetable broth
  • 1 tablespoon coconut oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric powder
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 (13.5 ounce) can full-fat coconut milk
  • Salt to taste
  • Fresh cilantro, chopped, for garnish

Instructions

  1. Combine rinsed lentils and vegetable broth in a pot. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until lentils are tender.
  2. While lentils cook, heat coconut oil in a separate pan over medium heat. Add chopped onion and cook until softened, about 5-7 minutes.
  3. Add minced garlic and grated ginger to the pan and cook for 1 minute more until fragrant.
  4. Stir in cumin, coriander, turmeric, and cayenne pepper (if using). Cook for another minute until the spices are fragrant.
  5. Pour the cooked onion and spice mixture into the pot with the tender lentils.
  6. Stir in the full-fat coconut milk and salt to taste.
  7. Simmer for another 5-10 minutes, stirring occasionally, until the curry has thickened to your desired consistency.
  8. Serve hot, garnished with fresh cilantro.

Notes

  • For a thicker curry, use less vegetable broth or simmer for a longer time.
  • Adjust cayenne pepper for your preferred level of heat.
  • Feel free to add other vegetables like spinach or diced sweet potatoes along with the lentils.
