- 1 flax egg (1 tablespoon ground flaxseed + 3 tablespoons water, let sit for 5 minutes)
- 1 teaspoon vanilla extract
- Preheat oven to 375°F (190°C). Line a muffin tin with paper liners or grease it.
- In a large bowl, whisk together the flour, protein powder, sugar, baking powder, and salt.
- In a separate medium bowl, whisk together the non-dairy milk, vegetable oil, flax egg, and vanilla extract.
- Pour the wet ingredients into the dry ingredients. Stir until just combined. Do not overmix.
- Divide the batter evenly among the muffin cups, filling each about two-thirds full.
