1 tablespoon olive oil
1 medium yellow onion, chopped
1 red bell pepper, chopped
2 cloves garlic, minced
1 (15 ounce) can black beans, rinsed and drained
1 (15 ounce) can kidney beans, rinsed and drained
1 (14.5 ounce) can diced tomatoes, undrained
1 (15 ounce) can tomato sauce
1 cup vegetable broth
2 tablespoons chili powder
1 teaspoon ground cumin
1/2 teaspoon dried oregano
1/4 teaspoon cayenne pepper (optional)
8 ounces elbow macaroni
1 cup milk (dairy or non-dairy)
1 cup shredded sharp cheddar cheese (or vegan alternative)
1/2 cup shredded Monterey Jack cheese (or vegan alternative)
Salt and black pepper to taste
Instructions
Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion and bell pepper and cook until softened, about 5 minutes.
Add the garlic and cook for 1 minute until fragrant.
Stir in the black beans, kidney beans, diced tomatoes, tomato sauce, vegetable broth, chili powder, cumin, oregano, and cayenne pepper if using. Bring the mixture to a simmer.
Add the elbow macaroni to the pot. Stir well to combine. Cover the pot and cook for 10 to 12 minutes, stirring occasionally, until the pasta is tender and most of the liquid is absorbed.
Reduce the heat to low. Stir in the milk.
Remove the pot from the heat. Gradually stir in the cheddar cheese and Monterey Jack cheese until the sauce is smooth and creamy.
Season with salt and pepper to your taste. Serve immediately.
Notes
For a thicker chili, cook uncovered for the last 5 minutes of the pasta cooking time.
You can substitute the beans with 1 cup of cooked lentils or crumbled plant-based ground for a different texture.
Top with shredded cheese, sour cream, chopped green onions, or crushed tortilla chips before serving.
