12 large white or cremini mushrooms
1 tablespoon olive oil
1 small shallot, finely minced
2 cloves garlic, minced
1 cup chopped spinach
1/2 cup cooked quinoa or breadcrumbs
1/4 cup grated Parmesan cheese (optional)
2 tablespoons cream cheese, softened
1 tablespoon fresh parsley, chopped
Salt, to taste
Black pepper, to taste
Instructions
Preheat your oven to 375°F (190°C). Lightly grease a baking sheet.
Gently clean the mushrooms. Remove the stems and finely chop the stems. Set the mushroom caps aside.
Heat the olive oil in a small skillet over medium heat. Add the chopped mushroom stems and the minced shallot. Cook until softened, about 3 minutes.
Add the minced garlic and cook for one minute until fragrant. Remove the skillet from the heat.
In a medium bowl, combine the cooked stem mixture, chopped spinach, quinoa or breadcrumbs, Parmesan cheese (if using), cream cheese, and fresh parsley.
Mix all the filling ingredients well until fully combined. Season generously with salt and pepper.
Spoon the veggie mixture evenly into the hollowed mushroom caps, mounding it slightly on top.
Place the stuffed mushrooms on the prepared baking sheet.
Bake for 15 to 20 minutes, or until the mushrooms are tender and the tops are lightly golden brown.

For a vegan option, skip the Parmesan and use a dairy-free cream cheese substitute.
