Ingredients

  • 1 bunch kale, stems removed and chopped
  • 1 cup pecans
  • 1/4 cup maple syrup
  • 1 tablespoon water
  • 1 teaspoon salt
  • 1/2 cup dried cranberries
  • 1/4 cup crumbled goat cheese (optional)
  • For the Dressing:
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon honey
  • Salt and pepper to taste

Instructions

  1. Prepare the candied pecans: Combine pecans, maple syrup, and water in a skillet over medium heat.
  2. Stir constantly until the liquid evaporates and the pecans are coated and toasted, about 5-7 minutes.
  3. Spread pecans on parchment paper and sprinkle lightly with salt. Let them cool completely.
  4. Whisk dressing ingredients: In a small bowl, combine olive oil, apple cider vinegar, Dijon mustard, honey, salt, and pepper. Whisk until emulsified.
  5. Prepare the kale: Place the chopped kale in a large bowl. Pour half of the dressing over the kale.
  6. Massage the dressing into the kale using your hands for 1-2 minutes until the kale begins to soften.
  7. Add remaining ingredients: Toss the massaged kale with the dried cranberries and goat cheese, if using.
  8. Top the salad with the cooled candied pecans just before serving.

Notes

  • You can substitute walnuts or almonds for pecans if you prefer.
