- 1 lb small potatoes, halved
- 1 head broccoli, cut into florets
- 2 carrots, sliced
- 1 lemon, sliced
- 3 tbsp olive oil
- 1 tsp dried rosemary
- 1 tsp dried thyme
- 1 tsp salt
- 0.5 tsp black pepper
- Preheat your oven to 400 degrees Fahrenheit.
- In a large bowl, combine the potatoes, broccoli, and carrots.
- Drizzle the vegetables with 2 tablespoons of olive oil, half the rosemary, half the thyme, half the salt, and half the pepper. Toss to coat.
