Ingredients
Scale
1 bag (10-16 oz) mini pretzels
12 oz white chocolate chips
2 tablespoons coconut oil
1 cup Greek yogurt (full fat recommended for best results)
Place the mini pretzels on the prepared baking sheet in a single layer.
In a microwave-safe bowl, combine the white chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each, until melted and smooth.
In a separate small bowl, whisk together the Greek yogurt, powdered sugar, and vanilla extract until smooth.
Gently fold the yogurt mixture into the melted white chocolate until just combined. Do not overmix.
Spoon or drizzle the yogurt-chocolate mixture over the pretzels, ensuring they are well coated.
If using, sprinkle your desired toppings over the coated pretzels immediately.
Place the baking sheet in the freezer for 15-20 minutes, or until the yogurt coating is firm.
Once firm, transfer the yogurt-covered pretzel bites to an airtight container.
Store in the freezer to maintain the coating’s firmness.
Notes
For best results, use full-fat Greek yogurt as it is thicker and less likely to split.
Ensure your bowl and utensils are completely dry, as water can cause the yogurt to seize.
Work quickly once the yogurt and chocolate are combined, as the mixture can start to thicken.
