1 cup dried brown or green lentils
3 cups vegetable broth
1 tablespoon olive oil
1 small onion, chopped
2 cloves garlic, minced
1 teaspoon ground cumin
1/2 teaspoon chili powder
1/4 teaspoon smoked paprika
1/4 cup fresh lime juice
1/4 cup chopped fresh cilantro
Salt and pepper to taste
Taco shells or your favorite bowl base
Instructions
Rinse the lentils well.
Combine lentils and vegetable broth in a pot. Bring to a boil, then reduce heat, cover, and simmer for 20-25 minutes, or until lentils are tender. Drain any excess liquid.
While lentils cook, heat olive oil in a skillet over medium heat. Add onion and cook until soft, about 5 minutes.
Add garlic, cumin, chili powder, and smoked paprika to the skillet. Cook for 1 minute until fragrant.
Add the cooked lentils to the skillet. Stir to coat with the spices.
Remove from heat. Stir in the fresh lime juice and chopped cilantro. Season with salt and pepper.
Serve the zesty lentil mixture immediately in taco shells or over your preferred lunch bowl base.
