1 pound large shrimp, peeled and deveined
1/4 cup fresh lime juice
1/4 cup chopped fresh cilantro
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional)
Lime wedges, for serving
Instructions
In a medium bowl, whisk together the lime juice, cilantro, olive oil, minced garlic, salt, pepper, and red pepper flakes. This is your marinade.
Add the peeled and deveined shrimp to the marinade. Toss gently to coat all pieces evenly.
Marinate the shrimp for 15 to 30 minutes in the refrigerator. Do not marinate longer than 30 minutes to prevent the lime juice from toughening the shrimp.
Preheat your grill to medium-high heat. Lightly oil the grates.
Thread the shrimp onto skewers, if desired, or place them directly on the grill.
Grill the shrimp for 2 to 3 minutes per side, until they turn pink and opaque throughout. Avoid overcooking.
Remove the shrimp from the grill immediately. Serve hot with fresh lime wedges.
Notes
If you are not using skewers, place the shrimp in a grill basket for easier turning.
For extra smoky flavor, add 1/2 teaspoon of smoked paprika to the marinade.
You can use frozen shrimp if you thaw and pat them completely dry before marinating.
