Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a standard 9×5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Set this dry mixture aside.
  3. In a large bowl, whisk the granulated sugar and brown sugar. Add the eggs, oil, and vanilla extract. Mix until just combined and smooth.
  4. Stir in the mashed ripe bananas and the grated zucchini until they are incorporated into the wet ingredients.
  5. Gradually add the dry ingredient mixture to the wet ingredients. Mix only until just combined. Do not overmix; a few streaks of flour are acceptable.
  6. Fold in any optional additions like nuts or chocolate chips gently.
  7. Pour the batter evenly into the prepared loaf pan.
  8. Bake for 50 to 65 minutes, or until a wooden skewer inserted into the center comes out clean or with a few moist crumbs attached.
