Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a standard 12-cup muffin tin or use paper liners.
  2. Grate the zucchini. Place the grated zucchini in a clean kitchen towel or paper towels and squeeze out as much liquid as possible. This step is key for texture.
  3. In a large bowl, whisk together the all-purpose flour, chickpea flour, baking powder, baking soda, salt, pepper, turmeric, and nutritional yeast.
  4. In a separate medium bowl, whisk together the plant-based milk, vegetable oil, and apple cider vinegar. Let it sit for two minutes to curdle slightly.
  5. Pour the wet ingredients into the dry ingredients. Mix gently until just combined. Do not overmix.
  6. Fold in the squeezed zucchini and the fresh herbs.
  7. Divide the batter evenly among the 12 muffin cups, filling each about two-thirds full.
