2 medium zucchini
1 large egg
1/4 cup all-purpose flour
1/4 teaspoon salt
1/8 teaspoon black pepper
1/2 cup pizza sauce
1/2 cup shredded mozzarella cheese
2 tablespoons mini pepperoni (optional)
1 teaspoon dried oregano
Instructions
Preheat your oven to 400°F (200°C). Lightly grease a baking sheet or line it with parchment paper.
Wash and trim the ends of the zucchini. Slice the zucchini into rounds about 1/4 inch thick.
Place the zucchini slices on a paper towel-lined plate. Sprinkle lightly with salt and let them sit for 10 minutes to draw out excess moisture. Pat them very dry with more paper towels. This step is crucial for crispness.
In a shallow bowl, whisk the egg. In a separate shallow bowl, mix the flour, salt, and pepper.
Dip each zucchini round first into the egg, allowing excess to drip off, then dredge it lightly in the flour mixture, shaking off any extra flour.
Arrange the breaded zucchini rounds in a single layer on the prepared baking sheet.
Bake the zucchini rounds for 10-12 minutes, or until they start to look slightly golden.
Remove the baking sheet from the oven. Top each round with a small spoonful of pizza sauce, a sprinkle of mozzarella cheese, and a piece of pepperoni, if using.
Sprinkle with dried oregano.
Return the bites to the oven and bake for another 5-7 minutes, or until the cheese is melted and bubbly.
