Create a comforting and creamy Zuppa Toscana soup from scratch, inspired by your favorite Italian restaurant. This hearty soup features savory Italian sausage, tender potatoes, and nutrient-rich kale in a rich, creamy broth.

Ingredients

  • 1 lb mild or hot Italian sausage
  • 1 large yellow onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups water
  • 1 lb russet potatoes, peeled and thinly sliced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 cup heavy cream
  • 1/2 cup half-and-half
  • Salt and freshly ground black pepper to taste
  • 1 bunch kale, tough stems removed and chopped

Instructions

  1. In a large pot or Dutch oven, cook the Italian sausage over medium heat until browned. Break it up with a spoon. Drain off most of the grease.
  2. Add the chopped onion to the pot and cook until softened, about 5-7 minutes.
  3. Stir in the minced garlic and cook for 1 minute more until fragrant.
  4. Pour in the chicken broth and water. Add the sliced potatoes, oregano, basil, and red pepper flakes (if using).
  5. Bring the mixture to a boil, then reduce heat and simmer for 15-20 minutes, or until the potatoes are tender.
  6. Stir in the heavy cream and half-and-half. Heat through, but do not boil.
  7. Season with salt and pepper to taste.
  8. Add the chopped kale to the soup and cook for about 5 minutes, or until wilted and tender.
  9. Serve hot and enjoy your homemade Zuppa Toscana!

Notes

  • For a thicker soup, mash some of the cooked potatoes against the side of the pot.
  • You can substitute spinach for kale if preferred.
  • Adjust the red pepper flakes for your desired level of heat.
