No-Knead Artisan Bread with Garlic and Rosemary

Make bakery-style crusty bread at home using this simple no-knead method, baked in a Dutch oven. This recipe includes garlic and rosemary for added flavor.

Ingredients

  • 3 cups all-purpose flour
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon instant yeast
  • 1 1/4 cups cool water
  • 2 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. In a large bowl, whisk together the flour, salt, and yeast.
  2. Add the cool water to the dry ingredients. Mix with a wooden spoon until just combined into a shaggy dough. Do not overmix.
  3. Cover the bowl tightly with plastic wrap and let it rest at room temperature for 12 to 18 hours. The dough will become bubbly and increase in volume.
  4. About 30 minutes before baking, place a 5- to 6-quart Dutch oven, with the lid on, into your oven. Preheat the oven to 450°F (232°C).
  5. Gently scrape the dough onto a lightly floured surface. Fold the dough over itself a few times to form a rough ball. Sprinkle the minced garlic, chopped rosemary, and Parmesan cheese (if using) over the dough and gently fold them in without deflating the dough too much.
  6. Carefully remove the hot Dutch oven from the oven. Take off the lid. Gently place the dough ball into the hot pot.
  7. Cover the Dutch oven with the lid and return it to the oven. Bake for 30 minutes.
  8. Remove the lid and continue baking for another 15 to 20 minutes, or until the crust is deep golden brown.
  9. Carefully remove the bread from the Dutch oven and let it cool completely on a wire rack before slicing.

Notes

  • For a crispier crust, you can place a metal pie plate on the bottom rack while preheating to hold ice cubes for steam generation during the first 30 minutes of baking.
  • If you do not have instant yeast, use active dry yeast and dissolve it in a small amount of the water first, letting it sit for 5 minutes before adding to the flour mixture.
  • Cooling the bread completely prevents the interior from becoming gummy.
