Prepare rich, creamy Southern cheese grits on the stovetop using sharp cheddar cheese for a comforting side dish or breakfast.

Ingredients

  • 4 cups water
  • 1 teaspoon salt
  • 1 cup stone ground grits (not instant)
  • 1/2 cup heavy cream
  • 4 tablespoons unsalted butter
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 teaspoon black pepper

Instructions

  1. Bring the water and salt to a boil in a medium saucepan.
  2. Slowly whisk in the grits to prevent lumps. Reduce the heat to low.
  3. Cover the saucepan and simmer, stirring every 5 minutes, for 25 to 30 minutes, or until the grits are tender and have absorbed most of the liquid.
  4. Stir in the heavy cream and butter until melted and combined.
  5. Remove the saucepan from the heat. Stir in the cheddar cheese and Monterey Jack cheese until fully melted and the grits are smooth and creamy.
  6. Season with black pepper. Serve immediately.

Notes

  • For extra flavor, use whole milk instead of heavy cream, but expect a slightly thinner final texture.
  • Use freshly shredded cheese; pre-shredded cheese contains anti-caking agents that prevent smooth melting.
  • If the grits become too thick upon standing, stir in a splash of hot water or milk to reach your desired consistency.
